thai beef



1 package of rice noodles or basmati rice
1/2 cup low-sodium soy sauce
3 tbsp sherry
2 tbsp packed brown sugar
1 tbsp minced fresh ginger
1 tsp red chii paste
2 cloves garlic, minced
1 lime, halved
1 lbs flank steak, thinly sliced
1 medium yellow onion, sliced into rings
1 tbs diced jalapeño
basil and cilantro leaves, for garnish


1.) Mix soy sauce, sherry, down sugar, ginger, chili paste, garlic and juice of 1/2 lime. Pour third of marinade in bowl with sliced beef. 
2.) Cook onions, bell peppers and jalapeños. 
3.) Add meat mixture to skillet. After 1 minute, reduce heat to simmer allow to sit for few minutes until sauce thickens. Turn off heat.
My kids love this meal with or without the noodles. At first the noodles seem too crunchy give them time to soften.
