Shepard's pie

Serves: 6
Cooking and prep: 45 minutes total
 

Ingredients: 

1 lbs ground grass-fed beef
1 medium onion, chopped
1 garlic clove, minced
1/4 tsp dried thyme
1/4 c homemade chicken broth
2 carrots
2 stalks celery
coarse salt and ground pepper
3 cups mashed potatoes with goat butter


Directions:

1.) Preheat oven to 350˚ 
2.) Sauté chopped onion, carrots and celery with oil or butter, add salt pepper thyme. Add ground meat till brown. Feel free to add other left over veggies broccoli, brussels etc. 
3.) Boil 1 lb of organic potatoes, mash, add butter.
4.) Spoon beef mixture into a 2-quart baking dish. Spread potatoes evenly over beef; using a fork, decorate potatoes with lines and peaks. Place dish on a rimmed baking sheet, bake until potatoes are lightly browned, 10-15 mins.

I serve this with spinach or swiss chard.
