Ginger Soy Marinated Flank Steak

serves 4-6


For marinade:
1 tsp thinly sliced fresh ginger
1 clove garlic, thinly sliced
1 tbsp sesame oil
1/2 cup soy sauce
1 tsp honey
s&p to taste
For steak:
1 1/2 lbs flank steak
1/4 thinly sliced scallions


1.)  Add steak to mixed marinade and let marinate for at least 4 hours or overnight.
2.) Grill or broil about 5-7 mins.
3.) To serve: Heat up marinade and pour over steak and scatter sliced scallions over top.

Absurdly Addictive Asparagus 


serves 4


4 oz pancetta, diced
1 tbs butter
1 lbs asparagus
1 1/2 cups leek, thinly sliced
2 cloves garlic, minced
zest of one lemon
1 tsp orange zest
2 tbs toasted pine nuts
1-2 tbsp parsley, chopped
s&p to taste


1.) Sauté pancetta
2.) Sauté asparagus and leek
3.) Add garlic, lemon and orange zest, toasted pine nuts and parsley and sauté for 1 minute. Season with s&p

Potato Salad


serves 6-8


6-8 potatoes 
1 cup cornichons, chopped
4 hard-boiled eggs, chopped
1/4 cup freshly-squeezed lemon juice (about 1 lemon)
1/4 cup olive oil
1 cup of mayo* (I did this with maybe 1/4 of a cup. Still great with barely any!)
bunch of Parsley
s&p to taste
optional: peas,bacon, prosciutto


1.) Peel and boil potatoes. Mash
2.) Chop cornichons. Mix cornichons, eggs and potatoes. Add the lemon juice olive oil and 1 cup of mayo. S&P to taste
3.) Refrigerate overnight. 

*Can substitute Veganaise for mayo.
