cauliflower PIZZA CRUST

ingredients

For crust:
1 Cauliflower head, roughly chopped
1/4 sliced basil
1 tsp olive oil
1/8 tsp pepper
1/8 tsp salt
3 cloves garlic
2 oz shredded mozarella
2 large egg whites
oz grated Parmesan cheese
For topping suggestion:
1/2 cup 
sliced cremini mushrooms
1/2 cup sliced red bell pepper
1/4 cup thinly sliced fresh basil
1/8 tsp ground pepper
.5 oz shredded mozarella
1/2 cup thinly sliced tomatoes
2/3 cup fresh baby spinach

directions

1. Preheat oven to 375˚
2. Place cauliflower in food processor, pulse 10-15 times (finely chopped like rice). Coat in olive oil and place on baking sheet for 25 minutes.
3. Place cauliflower into bowl, squeeze until dry. Combine cauliflower, combine 1 tsp olive oil, 1/4 cup basil, 1/8 tsp black pepper, salt, garlic 2 oz moz. cheese, egg whites and Parmesan cheese in a bowl. Press cauliflower mixture into 2 circles on a baking sheet lined with parchment paper. Coat lightly in olive oil.
4. Bake crusts at 450˚ for 22 minutes.
5. Topping suggestion: sauté bell peppers and mushrooms. Top pizza with topping ingredients.. Cook for additional 7 minutes or until the cheese melts
This is a must try. A great way to change it up for pizza. My kids loved it and everyone can create their own.
