Carrot cake muffins

Delicious paleo carrot-cake muffins! 

Ingredients:

  • 1/4 cup coconut flour
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 2 1/2 tsp cinnamon
  • 3 large eggs
  • 1/4 coconut oil
  • 1/4 cup honey
  • 1 tsp vanilla
  • 2 cups shredded carrots

Instructions

  1. Preheat oven to 375 degrees F.

  2. Combine the wet ingredients (leaving out the carrotin a mixer and mix until smooth. Add the dry ingredients and mix until combined. Add the shredded carrots and mix until incorporated.

  3. Pour batter into a lined muffin tray.

  4. Place in the oven and bake for 20-25 minutes
